Here are three delicious ways I love to use 505 Southwestern® Flame Roasted Green Chile.
Pinwheels by Jen: This is my friend Jen’s recipe for pinwheels. These bite-size, tortilla wrapped “sandwiches” make perfect appetizers, a tasty snack, or a quick lunch.
Ingredients:
8 oz. cream cheese, softened
8 oz. sour cream
2 cups grated cheddar cheese
4-8 oz. 505 Southwestern® Flame Roasted Green Chile
4 oz. sliced black olives
4-6 oz. jalapeños
1 bunch green onions, diced
1 pkg. burrito size flour tortillas
Instructions:
1. Put all ingredients – except for tortillas -into a food processor fitted with the chopping/mixing blade, (aka the S blade).
2. Pulse until ingredients are thoroughly combined, not too chunky, but not creamy, you want some texture.
3. Place each tortilla on plastic wrap, spread an even layer of mixture onto the tortillas leaving about an inch of tortilla uncovered all around the edge.
4. Roll up each tortilla tightly in the plastic wrap, and chill in the refrigerator overnight.
5. Unwrap & slice each tortilla an inch thick and serve.
White Chicken Enchiladas a la Angie: This recipe comes from my mom’s best friend Angie, and is my go-to chicken enchilada recipe.
Ingredients:
1 family size can (22.6 oz.) of cream of chicken soup
16 oz. regular sour cream
8 oz. 505 Southwestern® Flame Roasted Green Chile, plus extra for filling
1 bunch green onions, diced
1 cup chicken broth
1 lb. shredded chicken meat (I use the hand pulled KS rotisserie chicken meat)
16 oz. bag of shredded Mexican cheese
6 burrito size flour tortillas
optional: jalapeños
Instructions:
1. Mix first five ingredients together in a saucepan and warm over medium heat stirring until heated through but not boiling
2. Cover the bottom of a 9×13 baking dish with a thin layer of sauce
3. In each tortilla place about a handful of shredded chicken, a sprinkle of cheese and spoonful 505 Southwestern® Flame Roasted Green Chile and roll up burrito style.
4. Place each tortilla in baking dish and cover with remaining sauce.
5. Sprinkle top with remaining cheese, and top with jalapeños if desired.
6. Bake at 350º F for 30-45 min until top is slightly browned and sauce is bubbly.
Green Chile Queso 2 ways:
For a quick & easy green Chile queso, just add 4 oz. of 505 Southwestern® Flame Roasted Green Chile to 8 oz. of an easy-melt cheese and microwave until smooth and hot.
Or, for the delicious homemade queso shown below you’ll have to visit the 505 Southwestern® website for their recipe – and trust me it’s worth the extra effort!
